About Me

I grew up in a home where food was at the center of every celebration. My father was a gifted cook in the Puerto Rico National Guard, known for the meals he prepared during training camps—so much so that soldiers from other units would line up just to eat. Watching him cook is where my love for food began.
​
My path to becoming a plant-based chef was not a straight line. As a teenager, I trained as a professional jockey at Puerto Rico’s Jockey School and raced competitively. The physical demands of the sport eventually led me to step away, choosing long-term health and family over the track. I then spent more than 20 years in the insurance industry, building a successful career in sales and leadership.

In 2013, my wife, close friends, and I made the decision to adopt a plant-based lifestyle. What began as a personal health choice quickly aligned with my values and my respect for animals—and it reignited my passion for cooking. Determined to take that passion seriously, I moved to New York to study at the Institute of Culinary Education, completing my internship at the acclaimed vegan restaurant Modern Love before returning to Virginia.
In 2020, during the pandemic, I co-founded The Vegan Factory. What started as meal prep evolved into pop-ups, a food truck, and eventually the realization that our food—especially our plant-based asada—was connecting with people in a powerful way. Not because it was vegan, but because it was genuinely good.

Today, I lead the culinary vision behind BELU Foods while also offering personal, in-home vegan chef services. My focus is simple: create plant-based food that surprises people, respects animals, and delivers bold, memorable flavor. Every dish I cook reflects years of discipline, reinvention, and a deep commitment to doing this work with intention.

Each retreat is unique. Details such as group size, duration, location, and level of involvement are discussed during the inquiry process to ensure alignment and a smooth experience.

My work focuses on intimate in-home dining, weekly meal preparation, and small gatherings with friends. I do not offer catering services, weddings, or large-scale events. Each experience is thoughtfully designed to fit your lifestyle, preferences, and dietary needs—never rushed, never impersonal.
Menus are seasonal, carefully planned, and prepared on-site in your kitchen. I work primarily with the cookware, tableware, and space you already have, keeping the experience relaxed and grounded. If a specific dish requires special serving pieces, we’ll align on that together ahead of time.
This is about nourishing food, meaningful moments, and a calm, elevated atmosphere—where everything feels intentional, comfortable, and personal.

2. Menu Design & Planning

Based on our conversation, I design a customized, plant-based menu tailored to your tastes, lifestyle, and the rhythm of your home.
Menus are seasonal, intentional, and thoughtfully paced, focusing on balance, flavor, and the overall experience rather than excess.

3. In-Home Experience
​
On the day of service, I cook on-site in your kitchen, working primarily with the cookware and tableware you already have.
Everything is handled calmly and professionally so you can relax and enjoy the moment, whether the experience is prepared ahead of time or enjoyed together.

4. Clean-Up & Close
​
I leave your kitchen clean, organized, and ready to use, allowing the experience to end as smoothly as it began.
